Hand harvested. Blanc de Noir. Soft pressing of whole bunch. Spontaneous fermentation in 700L French oak barrels where it is aged for 6 months on it's lees.
 
On the nose, pepper, flowers, vanilla and brioche. Medium-minus acidity. Full-bodied, balanced, with a very slightly bitter finish. Complex
